Low Carb Mashed Cauliflower with Goat Cheese
Low Carb Mashed Cauliflower with Goat Cheese is the side your next dinner was waiting for.
This recipe is seriously good, no lie. So, I have been craving goat cheese for some time now. But I needed to make something to use the goat cheese in so I wasn’t just eating a log of goat cheese. This is when the idea of mashed cauliflower came to mind. These days it seems everybody is going low carb. Myself and the family included. Being Italian and having been raised on crusty bread and loads of pasta going low carb ain’t easy. Some bland, tasteless mash just isn’t going to cut it. Know what I mean?
I’ve made mashed cauliflower for the family before in a couple different variations. This low carb mashed cauliflower version with goat cheese is by far my best version. The addition of the finely cut chives across the top just set the flavor over the edge. If you have a large family you may need a couple heads of cauliflower. For this recipe I got a big honking head from Sam’s Club that weighed 2 lbs. This produced enough servings for my family of five.
Let’s do the Mash
Grab all the ingredients that you are going to need. This includes fresh cauliflower, butter, goat cheese, chives and salt and pepper.
Now cut the cauliflower into chunks or flowerettes about the size of a golf ball.
Toss the flowerettes into a saucepan and bring cold water halfway up the cauliflower. Add about 2 tablespoons of salt to the pan and place over high heat, covered. Let cook for roughly 20-25 minutes or until your cauliflower is nice and tender. Remove the cooked cauliflower from the heat and drain. Add the butter, goat cheese and fresh cracked pepper and replace the lid. While the butter and goat cheese is warming up pull out your potato masher or stick blender. I prefer the stick blender as it makes the make nice and smooth. You shouldn’t have to add salt to this step as you already preseasoned with salt and the goat cheese adds a nice tangy flavor so salt isn’t all that necessary.
This low carb mashed cauliflower goes great with grilled steak, pot roast, bbq chicken, you name it. So you don’t have to suffer just because you went low carb, just add goat cheese. Enjoy.
- 2 lbs fresh cauliflower
- 2 tbsp kosher salt
- 5 tbsp butter
- 4 oz goat cheese
- TT fresh cracked pepper

Cut the head(s) of cauliflower into golf sized pieces and place in saucepan half covered in water with 2 tbsp of kosher salt.

Cook over high heat for 20-25 minutes or until cauliflower is tender. Drain.

Add the butter, goat cheese and pepper to pan and replace lid. Let warm for a minute or two.

With masher or stick blender whip the cauliflower until nice and smooth.

Add chopped chives on top for a kick over the edge.
